解毒養顏湯
涼瓜豆腐肉碎湯
材料:
涼瓜一個(約半斤)
豆腐一磚
免治豬肉4兩
雞蛋5隻
薑一小舊
杞子20粒
處理:
1. 涼瓜,切兩端,打直1開2,去籽,切細塊。
2. 預備一飯碗清水,加入粗鹽半茶匙,放涼瓜浸2分鐘,去除部分苦澀味。
3. 豬肉,放碗內,加入調味料:
a. 生粉一湯匙
b. 胡椒粉適量
c. 糖半湯匙
d. 生抽一湯匙
撈勻。
4. 薑,去皮,切片,放碗內。
5. 豆腐,清水洗乾淨,切粒,放同一個碗內。
6. 雞蛋,打在碗內。
7. 杞子,清水浸一分鐘。
8. 涼瓜,清水沖洗乾淨,擎乾水。
烹調:
1. 大火在鑊內燒熱油一湯匙。
2. 雞蛋,放鑊內,煎至半熟,反轉另一面,轉慢火,一隻一隻雞蛋切開,推向鑊邊。
3. 轉大火,加入涼瓜,炒勻。
4. 加入豬肉,炒勻。
5. 加入薑片,炒勻。
6. 加入豆腐。
7. 加入清水一湯碗,大火滾起,直至豬肉熟透。
8. 加入杞子,大火滾起。
9. 湯,倒入大碗內。
10. 完成,可享用。
Tofu and minced meat soup with bitter melon
Ingredients:
Bitter melon 1 No. (About 0.5 catty)
Tofu 1 cube
Minced pork meat 4 taels
Eggs 5 Nos.
Ginger (small) 1 No.
Wolfberries 20 Nos.
Preparation:
1. The melon, cut both ends. Divide it into 2 shares vertically. Remove seeds. Cut in small pieces.
2. Get ready for a bowl of water. Add in 0.5 tsp of cooking salt. Soak the bitter melon for 2 minutes, to remove some of the bitter tastes.
3. The pork, put in a bowl. Add seasoning:
a. Tapioca starch 1 tbsp
b. Pepper appropriate amount
c. Sugar 0.5 tbsp
d. Light soya sauce 1 tbsp
Mix well.
4. Ginger, get it peeled and sliced. Put in a bowl.
5. Tofu, rinse with tap water. Dice in cubes. Put in the bowl.
6. Eggs, break in a bowl.
7. Wolfberries, soak in tap water for a minute.
8. Bitter melon, rinse thoroughly. Drain.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Eggs, put in the wok. Fry until medium well. Flip over. Turn to low flame. Cut them one by one and push them to the edge of the wok.
3. Turn to high flame. Add in the melon, fry well.
4. Add in the pork, fry well.
5. Add in ginger, fry well.
6. Add in tofu.
7. Add in a big bowl of water. Heat up at high flame until the pork has been cooked well.
8. Add in wolfberries, heat up at high flame.
9. Pour the soup in a big bowl.
10. Complete. Serve.
This bitter melon soup, which is especially good to drink in summer. Make this soup tonight.
