I always wonder, when uncle chops raw meat (especially poultry) whether the food ends up with those dangerously sharp tiny slivers of bone in it? Shards of poultry bones are like needles.
Edited to add – do Chinese people not hang their meat? A fresh killed lamb will have very tough meat, surely?
