佢啲嘢食係有啲唔對版嘅，但外國人鐘意食，所以做得住。

Yup. You’re learning that the chains like Wagamama and Pho are a diluted approximation of the originals. They go through test kitchens with British cooks who don’t quite get it. So you end up with “seng” ingredients like uncooked beanshoots and peashoots all over them.

Wagamama’s most popular dish is the katsu curry and rice tbh.

You found the small first/second gen places are much better, like the Vietnamese place you tried. Even Wong Kee beats all of the British chains at least that’s real Chinese food.
