今晚唔怕凍
比目魚雞粒煲仔飯
材料:
急凍比目魚2塊
急凍雞扒2塊
冬菇5隻
薑1小舊
白米3膠嘜
處理:
1. 冬菇,清水浸軟。
2. 比目魚,清水解凍。
3. 雞扒,清水解凍。
4. 雞扒解凍後,倒去水分,加入粗鹽1湯匙,乸5分鐘,去除雪味、腥味及加入少許鹹味。
5. 比目魚解凍後,清水洗乾淨,輕手揸乾水,擎乾水。
6. 冬菇已浸軟,切去椗,清水沖洗乾淨,揸乾水,切絲,放碗內,加入糖1茶匙,撈勻。
7. 薑,去皮,洗乾淨,切碎,放碗內。
8. 雞扒,清水洗乾淨,廚紙索乾,切粒。
9. 雞粒調味:
a. 薑汁,再加入少量薑粒
b. 生粉1湯匙
c. 油1湯匙
d. 糖1湯匙
e. 蠔油1湯匙
f. 生抽半湯匙
g. 胡椒粉適量
撈勻,加入冬菇絲,撈勻。
10. 米,放入煲仔內,清水洗乾淨,加入適量清水,大火煲滾。
烹調:
1. 米,已滾起,轉慢火,加入雞粒及冬菇,冚蓋,大火滾起。
2. 米滾起後,轉最慢火,焗15分鐘。
3. 加入比目魚,掃少許醬汁在魚上面,灑上薑粒,轉大火,煮2分鐘。
4. 轉最慢火,焗5分鐘。
5. 完成,可享用。

Ingredients:
Frozen halibut 2 pcs
Frozen chicken steak 2 Nos.
Mushrooms 5 Nos.
Ginger (small) 1 No.
Plain rice 3 plastic cups
Preparation:
1. Mushrooms, soak in tap water until they turn soft.
2. The halibut, defrost in tap water.
3. Chicken steak, defrost in tap water.
4. Chicken steak has been defrosted, pour away water. Add in 1 tbsp of cooking salt, season for 5 minutes, to remove unpleasant smells and add some salty tastes to it.
5. Halibut has been defrosted, rinse thoroughly. Squeeze it lightly. Drain.
6. Mushrooms have been softly soaked, cut the anchors. Rinse thoroughly. Squeeze them. Get them shredded. Put in a bowl. Add in 1 tsp of sugar, mix well.
7. Ginger, get it peeled. Rinse with tap water. Chop well. Put in a bowl.
8. Chicken steak, rinse with tap water. Dry with kitchen towels. Dice in cubes.
9. Season the chicken cubes:
a. Ginger juice, with a little ginger cubes
b. Tapioca starch 1 tbsp
c. Oil 1 tbsp
d. Sugar 1 tbsp
e. Oyster sauce 1 tbsp
f. Light soya sauce 0.5 tbsp
g. Pepper appropriate amount
Mix well, add in shredded mushrooms, mix well.
10. Plain rice, put in a pot. Rinse with tap water. Add in appropriate amount of water. Heat up at high flame.
Steps:
1. The rice, boils up. Turn to low flame. Add in chicken cubes and mushrooms. Cover up the pot. Heat up at high flame.
2. Turn to the lowest flame after the rice boils up. Leave it for 15 minutes.
3. Add in halibut. Brush little seasoning sauce on top of fish. Put ginger cubes on top. Turn to high flame. Cook for 2 minutes.
4. Turn to the lowest flame and cook for 5 minutes.
5. Complete. Serve.
