If any Vietnamese dishes that come with “fish sauce”, you must eat with the fish sauce or the whole dish will will become not authentic! The Fish sauce is NEVER sweet and it elevated the dishes to the next many levels!
Also, not sure what u meant by “processed pork”, like those pork from sausages? Vietnamese spring rolls are always made with fresh pork,wood ear and taro, and glass noodles…that’s why they are so good! I have been to my Vietnamese friends’ homes and help to prepare the foods for dinner together with their families, so I know how they are made!
